Beef Zucchini Casserole

This high-protein casserole is packed with flavour, nutrients, and whole foods that you can feel great serving to your family or fueling your body with.

Beef Zucchini Casserole

Ingredients:

  • 1 tbsp olive oil

  • 2 tbsp minced garlic

  • 1 lb ground beef

  • 2 slices turkey bacon, chopped

  • 1/2 cup diced onion

  • 2 tbsp 3 onion seasoning

  • 2 cups shredded potato

  • 2 cups diced zucchini

  • 1 cup diced mushroom

  • 1/2 cup light goat cheese

  • 1 cup shredded skim mozzarella

Instructions:

  1. Preheat oven to 350°F.

  2. Heat olive oil in a skillet, add onions and garlic, and sauté for 2–3 minutes.

  3. Add turkey bacon and ground beef, cooking until meat is fully cooked.

  4. Season with salt and onion seasoning.

  5. Transfer beef mixture, potatoes, zucchini, mushrooms, and goat cheese to a 9x13 baking dish. Mix well.

  6. Top with mozzarella and bake for 45 minutes, or until cheese is golden brown.
