Protein Potato Salad

Makes 5 servings

Ingredients:

  • 2lbs potatoes, diced and parboiled

  • 2 hard-boiled eggs (optional)

  • 1/2 cup diced celery

  • 1/2 cup plain 0% Greek yogurt

  • 1/2 cup light Miracle Whip

  • 2 tbsp yellow mustard

  • 1/2 tsp salt

  • 2 tbsp fresh dill (or 1 tbsp dried)

  • 20 oz cooked chicken breast

Instructions:

  • Ensure potatoes are cubed, parboiled, drained, and cooled.

  • Bake, cool, and cube chicken breast.

  • Hardboil, cool, and dice eggs.

  • Mix Greek yogurt, Miracle Whip, mustard, salt, and dill.

  • Combine all ingredients in a bowl and mix well.
