Protein Potato Salad
Makes 5 servings
Ingredients:
2lbs potatoes, diced and parboiled
2 hard-boiled eggs (optional)
1/2 cup diced celery
1/2 cup plain 0% Greek yogurt
1/2 cup light Miracle Whip
2 tbsp yellow mustard
1/2 tsp salt
2 tbsp fresh dill (or 1 tbsp dried)
20 oz cooked chicken breast
Instructions:
Ensure potatoes are cubed, parboiled, drained, and cooled.
Bake, cool, and cube chicken breast.
Hardboil, cool, and dice eggs.
Mix Greek yogurt, Miracle Whip, mustard, salt, and dill.
Combine all ingredients in a bowl and mix well.
